Busuttil Nishimura’s Mediterranean roots and mastery of market-fresh ingredients take centre stage in this intimate long-table affair, complemented by the mesmerising rhythms of a thunderstorm unfolding in real-time through light and sound.
The menu mirrors the storm’s raw chaos and beauty – meticulously crafted yet gloriously unpredictable, echoing the forces above and the seasons below. Each dish reflects a profound connection to land and produce, an ode to the fleeting impermanence of nature.
